The coffee tart, the star dessert of the Quartier Latin patisserie for three decades, is a real invitation to gourmandise. Here's how to prepare it in two simple steps:

Shortcrust pastry :

 

- 175 g butter 

- 100g sugar 

- 4 egg yolks 

- 300 g flour

 

1. Mix the sugar and butter together, then add the egg yolks.

2. Gradually add the flour until you have a smooth dough.

3. Roll out the pastry and place in a tart tin.

4. Bake at 180°C for approximately 20 minutes.

Coffee mixture :

 

- 3 egg yolks

- 3 whole eggs

- 150 g butter

- 100 g brown sugar

- 200 g fine sugar

- 20 ml coffee extract

- 20 cl whipping cream

 

1. Mix the butter, brown sugar and fine sugar.

2. Mix in the egg yolks and whole eggs.

3. Add the coffee extract and crème fraîche.

4. Pour the mixture over the pre-baked shortcrust pastry.

5. Bake at 140°C for approximately 40 minutes.
